The fluffiest waffle ever!
I adapted the Simple Pumpkin Pancake recipe and turned it into waffles. It’s gluten-free, dairy-free, free of refined sugar, and packed with protein for the ultimate healthy waffles great for meal-prepping for the week or a leisurely weekend brunch. This is a must-make this fall!
So light + fluffy with the perfect hint of pumpkin + spice.

Recipe
15 minutes | 1 waffle
Ingredients
1/4 cup almond meal
1/4 cup coconut flour
1/2 cup Trader Joe’s gluten-free flour
1/4 cup organic rolled oats
2 Tbsp ground flax
1/2 scoop vanilla protein powder
1 egg
1/4 cup pumpkin purée
1-2 tsp pumpkin spice
1 tsp baking soda
Toppings:
apple butter + pumpkin butter + almond butter
frozen blueberries
pumpkin seeds
unsweetened coconut flakes
cacao nibs
Directions
Preheat your waffle iron + spray with coconut oil spray.
Mix all ingredients together. Pour batter into waffle iron + cook to desired doneness. Waffle should be golden brown.
Top waffle with toppings.
