These garlicky potatoes are super simple + cooked perfectly!
These are the best side dish and would be perfect to bring to a Friendsgiving / Thanksgiving celebration or any other dinner party.
Crispy on the outside, soft on the inside with a tang of lemon.

15 minutes | 3 servings
Ingredients
1 tsp coconut oil
1 1/2 white onion (sliced)
1 Russet potato (chopped)
1 cup Enokitake mushrooms
1/2 lemon, juice
1-2 Tbsp fresh thyme
2 tsp garlic powder
salt + pepper to taste
Directions
In a large skillet heat coconut oil over medium-high heat and add onions. Cook until slightly soft and starting to get translucent / caramelized.
Add potato + mushrooms and remaining ingredients. Sauté for 5-7 minutes.
Once mostly cooked through leave on heat for a couple of minutes to get crispy. Flip a few times to get potatoes crispy on all sides.
