They are super soft, naturally sweet, and slightly salty with a boost of healthy fat + protein. A perfect end to any meal as dessert or can even have as a breakfast cookie!

20 minutes | 12 cookie muffins
Ingredients
1/3 cup unsweetened coconut flakes
1 cup almonds
1 ripe banana, mashed
1 scoop collagen peptides - Vital Proteins
1 tsp cinnamon
1 tsp cacao nibs
1/3 cup oats
1/3 cup pumpkin seeds
1/3 cup coconut oil + 4th & Heart Pink Himalayan Salt Ghee (I put a scoop of ghee in the measuring cup then filled the rest with coconut oil)
1/4 cup organic dark chocolate chips
Directions
Preheat the oven to 350 d F.
Grease a 12-tin muffin pan with coconut oil spray.
Blend together coconut flakes and almonds to form a flour.
Combine all ingredients in a large mixing bowl.
Portion into 12 balls and press into the muffin tins.
Bake for 12 minutes and enjoy!
